S-Nitrosotióis como substituto de nitrito em apresuntados

O nitrito de sódio garante qualidade sensorial (cor e sabor), ação antioxidante e segurança microbiológica, mas seus potenciais riscos à saúde motivam a busca por novos substitutos. Nesse contexto, avaliou-se o uso dos S-nitrosotióis (RSNOs) S-nitroso-N-acetilcisteína (NAC-SNO) e S-nitroso N-acetilcisteína etil éster (NACET-SNO) como substitutos de nitrito de sódio em apresuntados. Produtos com diferentes concentrações (0,07 a 2,17 mM; i.e. 5, 10, 25, 50 e 150 mg nitrito equivalente - NEq/kg) de RSNOs foram elaborados em três repetições independentes e avaliados quanto ao teor de nitrito residual (NO2R), oxidação lipídica (TBARS), cor instrumental e sensorial (20 julgadores), comparando-os com amostras referências: não curadas (CONT-); e curadas com 150 mg/kg de nitrito de sódio (CONT+). A análise estatística foi realizada por ANOVA e testes de Tukey e Dunnett (p < 0,05). Os valores de NO2R aumentaram com maiores adições de RSNO, mas foram 86% menores do que CONT+. Menores valores de TBARS (0,40±0,29 mg MDA/kg) ocorreram em amostras contendo 50 e 150 mg NEq/kg de RSNO e CONT+, com maiores valores (1,42±0,26mg MDA/kg) em 5 e 10 mg NEq/kg de RSNO e CONT-. Os índices de cor L* e h das amostras contendo 50 e 150 mg NEq/kg de RSNO não diferiram, independentemente do tipo de agente de cura. Contudo, a cor das amostras contendo 150 mg NEq/kg de NAC-SNO foram percebidas como sendo similares a CONT+ pelo painel sensorial. Concluiu-se que 2,17 mM de NAC-SNO (150 mg NEq/kg) é uma alternativa viável para obtenção da cor curada e ação antioxidante característica em apresuntados.
